Ingredients

  • ¼ cup olive oil
  • 1 ¼ pound thick cut bacon (finely chopped and divided)
  • 2 white onions (peeled and chopped)
  • 8 clove garlic (peeled and chopped)
  • ½ cup packed brown sugar
  • 1 cup cider vinegar
  • ½ cup red wine vinegar
  • 2 (12 oz) cans whole peeled Italian tomatoes
  • ¼ cup chopped fresh basil leaves
  • 4 teaspoon canola oil (divided)
  • 1 teaspoon ground cumin
  • 1-2 dried chiles de árbol (thinly sliced crosswise)
  • 2 tablespoon minced shallot
  • 2 teaspoon fresh thyme leaves
  • salt and pepper (as needed for seasoning)
  • 1 pound ground pork
  • 3 ounce raw Mexican Chorizo
  • ¼ cup minced fresh parsley leaves
  • 4 slice provolone cheese
  • 4 soft burger buns (sliced crosswise and toasted on the insides)
  • 4 slice red onion
  • 4 red lettuce leaves
