Chocolatey Fresh Apple Cake

I love how apples add moisture to the spicy chocolate batter. Then you add the chocolate glaze to further enhance the chocolate flavor in the cake.

Ingredients

  • Cake:
  • 2 3/4 Cups All Purpose Flour
  • 2 Cups Granulated Sugar
  • 2/3 Cup Hershey's Cocoa Powder
  • 1 1/2 Tsp. Baking Soda
  • 1/2 Tsp. Baking Powder
  • 1 Tsp. Ground Cinnamon
  • 3/4 Tsp. Salt
  • 3 Large Eggs
  • 1 Cup Buttermilk (See Tip)
  • 1 Cup Vegetable Oil
  • 2 Tsp. Vanilla Extract
  • 2 Cups Honey Crisp Apple, Peeled, Shredded & Drained
  • 1 Cup Walnuts, Toasted & Chopped
  • Chocolate Glaze:
  • 2 Tbsp. Butter
  • 2 Tbsp. Hershey's Cocoa Powder
  • 2 Tbsp. Water
  • 1 Cup Powder Sugar
  • 1 Tsp. Vanilla Extract

Directions

  1. Heat oven to 350°F. Grease and flour 12-Cup fluted tube pan.
  2. Prepare Cake: Stir together flour, granulated sugar, cocoa, baking soda, baking powder, cinnamon and salt; set aside.
  3. In large mixer bowl, combine eggs, buttermilk, oil and vanilla; beat on low speed until blended. Gradually add dry ingredients; stir in apples and nuts until evenly mixed.
  4. Pour batter into prepared pan. Bake 60 - 65 minutes or until wooden pick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to wire rack. Cool completely. Sprinkle top with powdered sugar or drizzle with Chocolate Glaze.
  5. Prepare Chocolate Glaze: In small saucepan over low heat, melt butter. Add cocoa and water, stirring constantly until mixture thickens. Do not boil.
  6. Remove from heat; gradually bet in powdered sugar and vanilla until smooth and of glazing consistency. Add additional water, 1/2 teaspoon at a time, if necessary.
  7. Tip: You can substitute equal parts fat-free vanilla yogurt for the buttermilk.
