Rain and water logging outside the house means no play and no friends coming home, only a hearty dessert can bring cheers to the dull faces of my children. A dessert in which I can engage them to bake minus the mess I might face as aftermath. Hmm..a muffin or a cookie look easy to bake but then sifting the flour, kneading, perfect consistency…nope, forget it. Bread Pudding…yes it could give them a false feeling of baking something without much fuss. Easy and literally a child’s play recipe, nothing beats a warm bread pudding on a rainy day, a perfect comfort food for any time.

And as expected they wanted chocolate in their recipe and added cocoa to their bread pudding. The chocolate custard bread pudding you see in the picture is assembled and baked by my children, I have to admit that I did polish off half of the Ramekin from their share

Easy to bake, bread pudding is a savior on days when unwanted guests land at odd hours with a huge sweet tooth. Traditionally bread pudding recipe requires eggs to make the sauce for the bread to soak in, but I use custard powder instead. You could add what ever fruits you wish or the flavors you want to give to your dessert.Though the basic ingredients for both the puddings are same, bread, sugar and the custard, I changed the flavors with chocolate & cinnamon and vanilla & coconut in the recipe.

Ingredients;

(makes 4 small servings in ramekins)

1. Vanilla Custard Bread Pudding

Ramekins ready for bake.

Method; Tear the bread slices into small bits. Add 1 tbsp. of milk in the custard powder and dissolve it well. Take milk, sugar, cinnamon powder and custard powder mix in a large vessel and stir till the sugar is dissolved.

For the chocolate pudding dissolve cocoa powder in 1 tbsp. milk add it to the custard mixture and follow the rest of the recipe.

Soak the raisins and Goji berries (if using) in a little milk for about 5 minutes.

Grease 4 Ramekins with little butter and preheat the oven at 190°C for 10 minutes.

With custard drizzled on top.

Fill the ramekins with the bread pieces and add the raisins and Goji berries over it and add 1/2 tbsp butter on it. Pour the custard over the bread pieces add rest of the butter and bake it at 190°C for about 30-35 minutes till the top appears golden brown in colour.

Hot from oven...

Look at the warm golden brown bread pudding…just a drizzle of sauce and you are ready to dig in.

Sitting pretty..

You can eat the pudding from the Ramekin itself, I took it out for the picture. The chocolate bread pudding is assembled by both the kids, you could see streaks of plain bread peeping out

Hmm..hard to resist the aroma..

Add fruits like chopped apples, banana, mango, pears and strawberries in the pudding for more flavors and nutrition.

Oh..that chocolate sauce with pudding is heavenly..

Serve the pudding warm with honey, caramel, maple syrup, yogurt sauce, chocolate sauce or just as plain dessert.

Didn’t I tell you it is an easy-peasy dessert recipe to bake..make it and give a surprise to your family with this comforting custard bread pudding any time.

Notes;

Brown bread would be a healthier option in the pudding.

A days stale bread gives good result in terms of texture of the pudding.

You don’t need an oven for the recipe, you can even cook it in a steamer and steam the pudding in a large vessel.

Cool the bread pudding and serve it with a dollop of ice cream.
