Ingredients
- 1 1/2 c. Chocolate wafer crumbs
- 6 Tbsp. Butter, melted FILLING
- 12 ounce Chocolate chips
- 5 x Egg yolk
- 3 Tbsp. Brandy
- 1 1/2 c. Whipping cream
Directions
- Combine chocolate crumbs and butter, line the bottom and sides of a springform pan. Chill.
- In food processor or possibly blender combine chips, yolks and brandy. Bring whipping cream just to a boil and add in to chip mix with motor running. Blend one minute. Pour into crust and refrigerateat least six hrs.
- Variations: Lemon or possibly orange peel may be added to filling. Mint chocolate chips may be substituted. Mint liqueur may be substituted for brandy.
- WWC variations: Chocolate graham cracker crumbs work as well. I pre soften the chocolate chips in a microwave, place in a kitchenaid bowl and whip in the egg yolks and brandy, then add in the warm whipping cream and whip to blend. I have substituted the mint liqueur and add in crushed peppermint candy on the top for a mint version. Usually spread cold whip on top before serving.
