Chocolate Mint Frosted Brownies

Ingredients

  • 4 ounce Semi-sweet baking chocolate
  • 1/2 c. Butter or possibly margarine
  • 1 1/4 c. Sugar
  • 1 Tbsp. Light brown sugar
  • 1 tsp Vanilla extract
  • 3 x Large eggs
  • 3/4 c. Flour
  • 1 pch Salt
  • 4 c. Confectioners sugar
  • 1 1/2 c. Butter
  • 12 ounce Semi-sweet chocolate chips
  • 4 ounce Lowfat milk chocolate
  • 8 ounce White chocolate
  • 3 x Large eggs, (*See Note)
  • 2 tsp Vanilla
  • 2 tsp Peppermint

Directions

  1. Brownies: preheat oven to 325F. Grease and set aside an 8" square baking pan, or possibly 8" cake pan. Set aside.
  2. Place baking chocolate and butter in microwave-safe bowl. Heat on high for two min, stirring every 30 seconds, till melted. Cold slightly.
  3. In medium-sized mixing bowl combine white and brown sugars. Add in melted chocolate mix and beat with electric mixer till well blended. Setting mixer on low, add in Large eggs one at a time, blending well after each addition.
  4. Add in vanilla.
  5. Stir in the flour and salt till well blended. Pour into prepared pan, spreading proportionately. bake for 30-35 min, or possibly till sides are pulling away from pan. Don't OVERBAKE! Remove from oven and set on rack to cold. When completely cold top with Chocolate Mint Frosting.
  6. Chocolate Mint Frosting: Heat chocolate chips in double boiler or possibly in microwave. Beat together sugar, butter and Large eggs till fluffy. Add in vanilla and peppermint, along with the chocolate. Mix well. Spread proportionately over surface of cooled brownies. Chill till set.
  7. Makes 12 rich servings.
  8. Note: For the frosting you may want to an egg substitute in place of the raw Large eggs. There will be no discernable difference in flavor or possibly texture.
  9. "tweaking." These really are wonderful!
