Chocolate Mint Baked Alaska Cheesecake

Ingredients

  • 1 c. chocolate wafer cookie crumbs
  • 2 Tbsp. sugar
  • 3 Tbsp. butter or possibly margarine -- melted
  • 1 c. mint chocolate chips
  • 24 ounce cream cheese -- softened
  • 2/3 c. sugar
  • 3 lrg Large eggs
  • 1 tsp vanilla extract
  • 3 x egg whites
  • 7 ounce marshmallow cream

Directions

  1. Combine first 3 ingredients; firmly press onto bottom of a 9 inch spring form pan. Bake at 350 degrees F. for 10 min. Set prepared pan aside. Heat chocolate morsels in a small heavy saucepan over low heat, stirring constantly. Set aside. Beat cream cheese at medium speed with an electric mixer till fluffy; gradually add in 2/3 c. sugar, beating well. Add in Large eggs, one at a time, beating after each addition. Stir in melted chocolate and vanilla. Pour into prepared pan. Bake at 350 degrees F. for 50 min. Remove from oven; immediately run a knife around sides of cheesecake to loosen, and cold completely in pan on a wire rack. Cover and refrigerate8 hrs. Beat egg whites at high speed with an electric mixer till soft peaks form. Gradually add in marshmallow cream, beating till stiff peaks form. Remove sides of pan from cheesecake. Carefully spread egg white mix over top and sides of cake. Bake at 325 degrees F. for 25 to 30 min or possibly till golden. Serve immediately.
