- Chocolate Guinness Goodness - Adapted Slightly from Shane Philip Coffey via Epicurious
- 8 large egg yolks
- 1 cup sugar
- 1 (14.9 oz. can) Guinness Draught (you will only use half of this for the pudding - it's up to you as to what to do with the rest!)
- 3 cups heavy cream
- 7 oz. high quality bittersweet chocolate (at least 70% cacao), finely chopped
- 1 teaspoon vanilla
- 1/4 cup powdered sugar

%20%20Chocolate%20and%20Guinness%20are%20not%20two%20foods%20I%20would%20put%20together,%20I'm%20not%20a%20fan%20of%20Guinness%20as%20I'm%20not%20a%20beer%20drinker,%20but%20as%20you%20know,%20I%20AM%20a%20fan%20of%20chocolate!%3C/p%3E%3Cp%3ECreamy,%20smooth,%20rich,%20chocolate-y...like%20velvet%20over%20satin.%20%20You%20will%20NOT%20taste%20the%20beer,%20but%20you%20will%20discover%20a%20chocolate%20pudding%20with%20more%20depth%20than%20you've%20ever%20had%20before%20-%20and%20if%20you're%20worried%20about%20the%20alcohol,%20don't,%20it%20all%20cooks%20out%20and%20this%20is%20perfectly%20%22safe%22%20for%20leprechauns%20of%20all%20ages.%3C/p%3E%3Cp%3EGuinness%20has%20a%20dark,%20bitter,%20chocolate%20flavor,%20so%20it's%20the%20perfect%20background%20for%20this%20chocolate%20pudding.%20%20Do%20not%20use%20Extra%20Stout%20Guinness,%20as%20it's%20too%20bitter%20(if%20you%20ask%20me),%20just%20use%20the%20%22regular%22.%20%20%20After%20the%20pudding%20is%20cooked,%20it's%20put%20into%20a%20blender%20for%20a%20quick%20whirl,%20then%20poured%20into%20glasses%20and%20refrigerated%20until%20it's%20set%20and%20ready%20for%20it's%20crown%20-%20whipped%20cream.%20%20The%20original%20recipe%20called%20for%203/4%20cup%20of%20Guinness,%20boiled%20down%20to%201%20tablespoon%20then%20whipped%20into%20a%20creamy%20topping%20with%20heavy%20cream.%20%20I%20followed%20the%20recipe%20up%20to%20this%20point,%20but%20the%20fumes%20from%20beer%20reduction,%20which%20was%20thick,%20syrupy%20and%20potent,%20made%20me%20gag%20so%20I%20opted%20to%20leave%20it%20out%20of%20my%20whipped%20topping.%20%20So%20glad%20I%20did%20-%20this%20is%20perfect%20without%20it%20and%20If%20I%20knew%20what%20the%20Irish%20word%20for%20Hallelujah%20was%20I%20would%20be%20saying%20it%20with%20every%20bite%20-%20this%20is%20dang%20good,%20my%20friends,%205%20dangs%20on%20the%20ol'%20meter!%3C/p%3E%3Cp%3EYou%20won't%20need%20to%20turn%20on%20PBS%20to%20watch%20River%20Dance%20to%20get%20your%20Irish%20on...just%20make%20this%20pudding,%20it'll%20make%20your%20kilt%20fly%20up%20and%20you'll%20be%20clogging%20like%20a%20pro%20in%20no%20time!%3C/p%3E%3Cp%3EIn%20large%20glass%20(do%20not%20use%20metal)%20mixing%20bowl,%20whisk%20together%20egg%20yolks%20and%20sugar.%20Open%20can%20of%20Guinness%20and%20slowly%20pour%20into%204-cup%20measuring%20cup,%20pouring%20down%20side%20of%20cup%20to%20reduce%20foaming.%20Pour%20half%20of%20Guinness%20(about%207/8%20cup)%20into%20heavy-bottomed%203-quart%20saucepan.%20Add%202%201/4%20cups%20cream%20and%20whisk%20to%20combine.%20Set%20over%20medium%20heat%20and%20heat,%20whisking%20occasionally,%20until%20bubbles%20just%20begin%20to%20form%20at%20edges.%20Remove%20from%20heat,%20add%20chocolate,%20and%20whisk%20until%20smooth.%3C/p%3E%3Cp%3ESlowly%20pour%20some%20of%20the%20hot%20chocolate%20mixture%20into%20eggs,%20whisking%20constantly,%20to%20temper%20the%20eggs.%20%20Then%20slowly%20pour%20the%20egg%20mixture%20into%20the%20chocolate,%20whisking%20constantly.%20Return%20mixture%20to%20stove%20and%20%20moderately%20low%20heat.%20Cook,%20whisking%20constantly,%20until%20mixture%20thickens%20and%20coats%20back%20of%20spoon,%20about%2015%20minutes.%20(Pudding%20will%20look%20separated.)%20Pour%20into%20blender%20(in%20batches%20so%20you%20don't%20get%20burned)%20and%20blend%20on%20high%20for%201%20minute.%20Divide%20pudding%20among%20glasses,%20leaving%20at%20least%201%20inch%20of%20space%20at%20top%20of%20each.%20Cover%20with%20plastic%20wrap%20and%20refrigerate%20until%20chilled%20and%20set.%3C/p%3E%3Cp%3EBeat%20remaining%20cream%20until%20soft%20peaks%20form.%20Add%20vanilla%20and%20powdered%20sugar.%20%20Beat%20well.%20%20Divide%20cream%20among%206%20glasses%20of%20pudding%20and%20serve.%3C/p%3E%3Cp%3EOh%20To%20be%20Irish...%3C/p%3E%3Cp%3EBe%20they%20kings,%20or%20poets,%20or%20farmers,%3C/p%3E%3Cp%3EThey're%20a%20people%20of%20great%20worth,%3C/p%3E%3Cp%3EThey%20keep%20company%20with%20the%20angels,%3C/p%3E%3Cp%3EAnd%20bring%20a%20bit%20of%20Heaven%20here%20to%20Earth.%3C/p%3E){kind=link}
