Ingredients

  • 25 Chocolate Sandwich Cookies with filling
  • ½ cup unsalted butter, melted
  • Chocolate Ganache Filling
  • 12 oz. good quality bittersweet chocolate, finely chopped
  • 6 tbsp. unsalted butter, softened
  • 1 cup heavy cream
  • Pomegranate Glaze
  • ½ cup pomegranate juice
  • ¼ cup sugar
  • Juice of ½ lemon or 1 ½ TBS bottled lemon juice
  • ¾ cup pomegranate arils
  • 2 oz pistachios (optional)
