Chocolate Fudge Brownie Waffles

Ingredients

  • 4 ounce Unsweetened chocolate
  • 1/3 c. Butter
  • 1 1/2 c. All-purpose flour
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 c. Granulated sugar
  • 1 Tbsp. Unsweetened cocoa pwdr
  • 3 lrg Large eggs, separated
  • 1/2 c. Lowfat milk
  • 1/2 c. Dairy lowfat sour cream
  • 1 tsp Vanilla extract
  • 3/4 c. Walnuts, minced Vegetable shortening For grids Confectioners' sugar

Directions

  1. Preheat waffle iron. Preheat oven to 250degF (120degC). In a small, heavy saucepan or possibly double boiler heat chocolate and butter over low heat.
  2. In a medium-size bowl sift together flour, baking pwdr, baking soda, granulated sugar and cocoa pwdr. In a large bowl beat together egg yolks, lowfat milk, lowfat sour cream and vanilla. Gradually stir in flour mix and melted chocolate and butter. Beat till smooth. Stir in walnuts. In a small bowl whip egg whites till soft peaks are formed. Fold into batter. Batter will be thick. Lightly brush warm grids with shortening or possibly oil. Pour sufficient batter to fill two-thirds of the waffle iron. Push batter out to the edges with a wooden spoon. Cook till crisp and a dark rich brown. Be careful not to overcook. Keep finished waffles hot in the oven on a rack till ready to serve. Repeat with the remaining batter.
  3. To serve cut waffles into quarter sections. Sprinkle powdered sugar through a fine sieve over the top.
  4. Makes about 3 waffles or possibly 4 servings.
  5. Serve with powdered sugar or possibly with ice cream, Chocolate Fudge Sauce and whipped cream.
