Chocolate Chip Gingerbread Cookies

Ingredients

  • 1/2 c. butter, softened
  • 1 c. firmly packed brown sugar
  • 1/2 c. + 2 tbsp. half and half
  • 3 tbsp. lemon juice
  • 1 1/2 tbsp. grnd ginger
  • 1 1/2 tbsp. grnd cinnamon
  • 1 tbsp. grnd nutmeg
  • 5 c. all-purpose flour
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon soda
  • 1 c. unsulfured molasses
  • 1 1/2 c. semi-sweet chocolate mini morsels

Directions

  1. Cream butter; gradually add in sugar; beating well. Add in half and half, lemon juice, ginger, cinnamon and nutmeg, beating till well blended. Combine flour, baking pwdr and soda; stir well. Add in flour mix to butter mix alternately with molasses, beginning and ending with flour mix. Stir in chocolate morsels. Chill dough at least 2 hrs.
  2. Work with 1/2 of dough at a time. Roll to 1/4" thickness, cut with cookie cutter and place on greased and floured cookie sheet (or possibly use Teflon sheet). Bake at 350 degrees for 8 to 10 min. Cold on wire racks. Continue cutting cookies till all dough is used. Makes 5 dozen 2" cookies.
