Ingredients
2 c. Cooked chitterlings (chitlins) -- in sm. pcs Juice of 1/2 lemon
1/2 c. Diced celery
1/2 x To 3/4 c. Salt and pepper -- to taste Lettuce Paprika Mayonnaise
Directions
Sprinkle the chitterlings with lemon juice and let stand for at least 1 hour. Add in celery, mayonnaise, salt and pepper. Serve on beds of lettuce.
Dust with paprika. yield: 2-3 servings
