• salt & pepper
• 2 TBSP peanut oil
• 1 TBSP unsalted butter
• 3 TBSP all-purpose flour
• 1 large yellow onion, chopped
• 2 carrots, peeled and sliced
• 3 garlic cloves, minced
• 1 cup red wine
• 2 cups chicken stock
• 7-ounce can chipotles in adobo sauce, chopped
• 1/2 tsp dried thyme
• 1 bay leaf
