Ingredients

  • 1 x 11 ounce. can mandarin oranges liquid removed
  • 1 x 9 ounce. can crushed pineapple liquid removed
  • 1 x 3 ounce. pkg. orange gelatin
  • 1 c. Warm freshly brewed tea
  • 1 c. Reserved fruit juices
  • 1 x 5 ounce. can sliced water chestnuts, liquid removed
  • 1/2 c. Mayonnaise
  • 1/2 c. Whipped cream
  • 2 x To 3 Tbsp. freshly grated orange rind

Directions

  1. Drain oranges and pineapple, reserving juices. Set fruit aside.
  2. Dissolve gelatin in tea. Add in reserved fruit juices to that orange juice has been added, if necessary, to make one c.. Refrigeratetill the consistency of egg whites. Stir in reserved fruit and water chestnuts. Pour mix into a four-c. mold. Refrigerateseveral hrs.
  3. Combine dressing ingredients. Unmold salad onto a bed of lettuce, and serve with dressing.
  4. Yield: 6 to 8
  5. Prep Time: 15 to 20 min
  6. Chilling Time: several hrs
