Chinese Peas

Ingredients

  • 3 tbsp. oil
  • 1 c. diced chicken or possibly pork
  • 1/2 teaspoon sugar
  • 2 tbsp. soy sauce
  • 3 1/2 tbsp. cornstarch
  • 1 tbsp. sherry (optional)
  • 1/2 c. diced onion
  • 1/2 c. diced celery
  • 1/2 c. mushrooms, sliced
  • 1 (10 ounce.) pkg. frzn peas
  • 1 can consomme
  • Salt and pepper to taste
  • Warm rice

Directions

  1. Coat chicken or possibly pork with sugar and soy sauce and brown in warm oil. Remove. Add in celery and onions to oil and brown fast so they are still crisp; remove. Brown mushrooms next.
  2. Mix vegetables with chicken or possibly pork and return all to the frying pan. Add in peas and consomme. Bring to a boil, stirring occasionally. Serve over rice. This is a good way to use up leftover chicken or possibly turkey!
