Chinese Garlic Recipe-Braised Turtle Rim with Garlic
This dish has been appeared at the State Banquet on October 1, 1949.
Ingredients
- 200g garlic
- 400g fresh soft-shelled turtle
- 500g streaky bacon
- half of a chicken
- scallion
- 50g ginger
- 200g yellow wine.
Directions
- â boil the soft-shelled turtle by boil water for a second, and take it out, strip the black shin, and wash it clean, and then, chop it into equal sections.
- â¡ chop the chicken and streaky bacon into sections and boil them, and then, put them into pan together with the soft-shelled turtle, add yellow wine, leeks and ginger and enough water, use large fire to boil them, and medium fire to roast them, and take them out when the soft-shelled turtle is 80 percent done.
- ⢠get rid of the both ends of the garlic, and put it into oil until the color turns golden.
- ⣠put the fire on, put some oil into the round-bottomed frying pan, and then, put some bruised scallion and ginger, and the soup roasting soft-shelled turtle. Put the soft-shelled turtle in together with some pepper powder and water starch, finally, take them out.
