Ingredients

  • Serve 4
  • 8 x scallops, prepared Oil for frying
  • 2 1/2 x cm/1 inch Fresh Ginger, finely minced
  • 6 x Spring Onions, finely sliced on the diagonal Half a Cucumber, minced
  • 1 Tbsp. Oyster sauce
  • 1 tsp Sesame Oil Salt & Pepper
  • 2 x level tsp Plain Flour

Directions

  1. Slice the scallops and fry in the oil for 5-6 min till tender then remove from pan.
  2. Fry the ginger, spring onions and cucumber for 2 min then add in the scallops. Sprinkle over the flour then add in the rest of the ingredients. Stir fry till thoroughly mixed and divide between 4 scallop shells or possibly small dishes.
  3. Serve immediately as a starter.
