Chinese Fried 'Rice' Recipe

  • 1/2 head raw cauliflower (grated to make 3 1/2 c.)
  • 3 x green onions
  • 1 x garlic clove chopped (or possibly 1/2 tspn garlic pwdr)
  • 1/2 tsp ginger
  • 3 Tbsp. Soy Sauce
  • 3 x Large eggs beaten Extra virgin olive oil as needed Cooked chicken, beef, pork, shrimp, ham, turkey, etc. (any mix, your choice)

Directions

  1. In a wok or possibly large flat skillet, heat sufficient oil to cover the bottom. Fry chopped garlic (or possibly garlic pwdr) with finely diced white part of onions for approximately 1 minute. Add in grated cauliflower and fry for 4 to 5 min, stirring constantly.
  2. Add in soy, ginger, diced green onion tops, and pre-cooked cubed meat or possibly baby shrimp. Stir to mix well and brown a bit. Push mix to one side of pan.
  3. Add in more oil if necessary and scramble Large eggs in empty side of pan till done but still moist. Stir Large eggs into "rice" mix and remove from heat.
  4. This recipe yields 3 to 4 servings;
  5. Comments: For an additional 6 grams for the entire recipe, try adding 1/2 c. frzn green peas (about 2 min after adding cauliflower.) It adds great flavor and richness to the dish!
