Ingredients

  • chinese dipping sauce
  • 150 ml oil preferably groundnut
  • 1 Tbsp. dry red chillies minced
  • 2 tsp unroasted Sichuan peppercorns (optional)

Directions

  1. Heat a wok or possibly frying pan over a high heat and add in the oil.
  2. Continue to heat till the oil begins to smoke.
  3. Remove the wok or possibly pan from the heat and add in the chillis and peppercorns.
  4. Allow the mix to cold undisturbed and then pour it into a jar.
  5. Let the mix sit for 2 days and then strain the oil.
  6. It will keep indefinitely.
  7. For those who like warm and spicy food chilli oil is a must. It can be purchased ready made from chinese grocers but it is easy to make yourself. Chilli oil can be added as a final spicy touch to dishes during cooking or possibly it can be used as a dipping sauce either on its own or possibly combined with vinegar and soy sauce (eg pot sticker dumplings).
