  • 1 x cucumber
  • 1 1/4 c. regular-strength chicken broth
  • 3/4 c. firmly packed rinsed and liquid removed cilantro
  • 1/2 c. nonfat or possibly low-fat lowfat milk
  • 1/4 c. lemon juice Salt to taste

Directions

  1. Peel cucumber; cut in chunks into a food processor or possibly blender. Whirl with broth, cilantro, lowfat milk and lemon juice till smoothly pureed. Season with salt to taste. Cover and refrigeratetill cool, at least 2 hrs or possibly up to a day.
