Directions

  1. Heat broiler. Place pepper on foil-lined baking tray.
  2. Broil 2 inches from heat for 5 min. Turn and broil 5 morte min. Chopp walnuts in food processor. In a small bowl, mix lowfat sour cream, and lowfat milk together till smooth. Add in walnuts, cinnamon and and sugar and blend together. Set aside.
  3. Chop onion in food processor. With blades running, add in jalapeno peppers and garlic. Stop processor and add in beans and cumin and process till coarsely minced.
  4. Heat extra virgin olive oil in a nonstick skillet on medium high., add in bean mix and saute/fry 1 minute. Add in tomatoes and raisins and saute/fry for 2 min. Remove from heat and set aside. Remove peppers from broiler, cut in half and remove seeds. Return to tray and fill each with bean mix. Place peppers on individual plates, spoon sauce over top and serve with rice.
