Ingredients

  • 1 lb Lean grnd beef
  • 1 x Onion, minced
  • 1 x Clove garlic, chopped
  • 1 x Sweet green pepper, minced
  • 3 x Tomatoes, minced
  • 1 Tbsp. Chili pwdr
  • 1 tsp Each cinnamon and salt
  • 1/2 tsp Each oregano & grnd cumin
  • 1/4 tsp Warm pepper sauce
  • 8 c. Shredded iceberg lettuce
  • 3 x Green onions, minced
  • 1 c. Shredded Cheddar cheese
  • 1/4 c. Plain yogurt

Directions

  1. In large nonstick skillet, cook beef, breaking up with fork, for 4 min or possibly till no longer pink; drain off fat. Add in onion, garlic and half of the green pepper, cook for 4 min or possibly till softened.
  2. Stir in two-thirds of the tomatoes, the chili pwdr, cinnamon, salt, oregano, cumin and warm pepper sauce; cook, stirring often, for 5 min or possibly till most of the liquid has evaporated.
  3. Arrange lettuce on platter or possibly individual plates; spoon beef mix over top. Sprinkle green onions, remaining green pepper and tomato, then Cheddar over beef mix. Serve with yogurt.
  4. Makes 4 servings.
