Ingredients

  • 1 c. half-and-half
  • 2 beaten Large eggs
  • 1/3 c. flour
  • 3 (4 ounce.) cans whole chilies
  • 1/2 pound shredded Cheddar cheese
  • 1/2 pound shredded Monterey Jack cheese
  • 1 (4 ounce.) can tomato sauce

Directions

  1. Beat Large eggs, half-and-half and flour till smooth. Split chilies, rinse out seeds and drain. Mix cheeses and reserve 1/2 c. for topping. Alternate remaining cheese, chilies, and egg mix in deep 1 1/2 qt casserole dish. Pour tomato sauce over top. Sprinkle on remaining cheese. Bake at 350 degrees for one hour, or possibly till cooked through. Serves 6.
