Chili Orange Fish Fillets With Banana Recipe

  • 4 x Fish fillets red snapper, turbo, cod or possibly other fillets
  • 2 x Hard, ripe bananas halved lengthwise, then crosswise
  • 4 Tbsp. Fresh orange juice
  • 2 Tbsp. Grated orange zest
  • 2 Tbsp. Chopped red onion
  • 2 tsp Chopped, seeded fresh chilies
  • 4 x Fresh lime wedges

Directions

  1. Preheat the broiler. Arrange the fish fillets and bananas (cut side up)
  2. on a lightly greased broiler pan.
  3. In a small bowl, combine half the orange juice with the orange zest, red onion, chilies, and a healthy pinch each of salt and pepper. Spread proportionately over fish and bananas.
  4. Broil 4 inches from the heat source, without turning, till fish and bananas are well browned and the center of the thickest part of the fish is opaque, about 10 min.
  5. Transfer to a serving platter. Sprinkle with the remaining orange juice.
  6. Garnish with lime wedges.
