Chili Con Queso With Blue Corn Tortillas Recipe

Ingredients

  • 1 can of Chili, No Beans
  • 1 lb Velveeta (the Warm Mexican style)
  • 1 x (4 ounce.) can canned green chilies, diced
  • 2 x tomatoes, Roma, minced
  • 3 x scallions, minced end to end
  • 4 Tbsp. red onions, minced

Directions

  1. Combine all the ingredients in a heavy skillet and heat till smooth and reach just a boil. Be careful not to burn. This can be made in a crock-pot if you have the time to prepare ahead. It takes about two hrs on low.
  2. Serve in the crock-pot at a low setting with a bowl of blue corn tortillas.
  3. Or possibly serve with Frito's Scoops.
