Chili Colorado Con Carne (Red Chili With Meat

Ingredients

  • 1/2 lb Suet -- coarsely grnd
  • 2 c. Minced onions
  • 3 lb Coarsely grnd lean meat -- (combination of beef And pork or possibly any of these)
  • 6 x Garlic cloves
  • 2 tsp Salt
  • 6 Tbsp. Chili pwdr
  • 1 Tbsp. Grnd cumin
  • 1 Tbsp. Dry oregano -- crumbled Water
  • 1/4 c. Roasted flour -- optional Fried tortillas

Directions

  1. Cook suet and onions in heavy kettle till onions are tender but not browned. Add in meat and brown. Mash garlic in salt and stir into meat along with chili pwdr, cumin and oregano. Add in 1 1/2 qts water. Cover and simmer 1 hour. To thicken, if you like, blend roasted flour with 1/2 c. water and stir into mix. Simmer another half hour. Or possibly soak fried tortillas in water, blend till smooth and add in.
  2. Note: Chili Colorado can be served with pinto beans, rice, macaroni or possibly over tamales.
