Ingredients
- 6 x Roasted New Mexican Chiles roasted, peeled, minced
- 3 c. Chicken Broth
- 1 x Potato, peeled and diced
- 1 med Onion, minced
- 2 c. Whole Kernel Corn
- 1 c. Grated Cheddar Cheese
- 1 c. Heavy Cream
Directions
- Combine, chiles, broth, potato, onion, and corn in a large pot and cook over low heat till potatoes are done. Add in the cream and cheese and heat through, stirring, till the cheese is melted.
