  • 2 doz. corn tortillas (cut up in triangles)
  • 1 chicken (boiled, deboned and cut up in cubes)
  • 1 lg. onion, minced
  • 1 pound each cheese">Jack and Longhorn cheese (shredded)
  • 1 lg. can "Las Palmas" red chili sauce

Directions

  1. In large skillet, fry tortilla triangles (a few at a time) till they are crisp and golden brown. Take out of the skillet and place in plate lined with paper towels to absorb the oil. Repeat procedure till all the tortilla chips are done.
  2. In large bowl, place the tortilla chips, cubed chicken, shredded cheese, minced onion and red chile sauce. Mix well, then place in baking dish. Bake for 20 to 30 min at 350 degrees till cheese bubbles.
