Chickpea Soup (Zuppa Di Ceci) Recipe

  • 1 lb dry chickpeas
  • 1 pch baking soda
  • 1/4 c. extra virgin olive oil plus extra
  • 2 x cloves garlic cloves finely minced
  • 1/2 lrg onion finely minced
  • 1 x carrot finely minced
  • 1/2 stalk celery finely minced Finely-minced Italian parsley to taste
  • 1 Tbsp. finely-minced rosemary leaves
  • 1 lb pork riblets cut 1" segments
  • 1/4 lb pork skin piece (cotena) diced (or possibly 3 ounce pancetta, diced)
  • 1 lrg Swiss chard bunch

Directions

  1. Soak chickpeas at least 8 hrs in abundant cool water to that healthy pinch of baking soda has been added. Transfer soaked chickpeas to pot of tepid water and bring to boil.
  2. Heat extra virgin olive oil in large skillet over medium-high heat, add in garlic, onion, carrot and celery and saute/fry till onion browns, about 5 min, to make tritata. Add in parsley and rosemary toward end of sauteeing.
  3. When chickpeas come to boil, skim foam off surface with slotted spatula, reduce heat to simmer and cook about 10 min. Add in tritata to chickpeas, splashing a little cooking water into skillet to make sure every bit can be scraped into pot.
  4. Meanwhile, slowly bring pork riblets and pork skin to boil in separate pan of water to de-fat them slightly. When meat comes to boil, reduce heat and gently simmer about 10 min, then add in meat to soup pot. Leave soup to simmer till chickpeas are tender (depending on freshness of chickpeas, this can take 1 to 2 1/2 hrs).
  5. Soak Swiss chard; wash and cut white stems off at base. Cut chard leaves into fettuccine-wide ribbons. When chickpeas are just tender, add in chard and cook 15 more min. Serve hot with drizzle of extra virgin olive oil in each bowl added at table.
  6. This recipe yields 6 to 8 servings.
