Ingredients

  • 3 lb Whole chicken, cut up
  • 4 Tbsp. Extra virgin olive oil
  • 4 x Garlic cloves, sliced
  • 1/2 c. Wine vinegar
  • 1 jar sweet vinegar peppers, sliced, reserve liquid
  • 2 Tbsp. Parlsey, minced
  • 2 x Bay leaves
  • 1 tsp Oregano
  • 1/2 lb Mushrooms, sliced Salt/pepper

Directions

  1. Brown chicken in extra virgin olive oil and garlic. Add in all remaining ingredients except for peppers and reserved liquid. Cook uncovered for 45 min. Add in peppers and liquid. Cover and steam cook for 15 additional min.
