  1. Pasta: Cook pasta in boiling water according to package directions. Cut chicken into small strips and lb. thin. In a non-stick skillet, add in oil and cook chicken for 10 min. Add in broccoli, carrots and red peppers. Saute/fry.
  2. Toss with Thai Peanut Sauce and sprinkle with minced peanuts and parsley.
  3. Serve warm.
