Ingredients

  • 2 ounce Softened goat cheese
  • 1 tsp Fresh parsley - minced
  • 1/2 tsp Fresh thyme - minced
  • 1/2 tsp Chopped garlic Black pepper to taste
  • 2 x Boneless, skinless chicken breasts
  • 1 Tbsp. Extra virgin olive oil
  • 1 lrg Ripe tomato - quartered
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Balsamic vinegar Salt and pepper to taste

Directions

  1. Directions: Preheat the oven to 400 degrees. Combine the goat cheese, minced herbs, garlic and black pepper. Set aside. Using a boning knife, create a pocket in the chicken breasts and fill with the goat cheese mix. Seal pocket shut with a skewer. Heat the extra virgin olive oil in a pan till warm. Season the chicken with salt on both sides and sear in the warm pan. Place chicken in a baking dish and cook for 8-10 min in the oven till the internal temperature of the chicken reaches 165 degrees. Remove seeds from the tomatoes and quarter.
  2. Pulse in a food processor till smooth. Add in the extra virgin olive oil, balsamic vinegar, salt and pepper to taste. Present chicken on plate, topped with a thin layer of tomato sauce. Garnish with parsley and thyme.
