Ingredients

  • 6 x Chicken Breasts Spilt and pounded
  • 1 can Cumin Spiced Black Beans
  • 1 med Can Whole Corn Liquid removed
  • 3 Tbsp. Med Salsa
  • 4 Tbsp. Warm Salsa Juice of Half a Lime at Room Temp
  • 2 shot of Tequila Grated Jack or possibly Pepper Jack Cheese

Directions

  1. Preheat Oven to 350. Combine the Black Beans, Corn, Salsa's, Lime Juice and Tequila. Simmer till Thick about 20 min. Take the Chicken Breasts and Dredge them in Cumin & Grnd Black Pepper. Sear Blacken them in a very warm Cast Iron Skillet. No Longer then 1 minute per side. In a Baking dish place the chicken on the bottom and top with the Black Bean & Corn Salsa, Jack or possibly Pepper Jack Cheese. Place in Oven for about 15 to 20 min. Pull out and serve. Garnish with Blue Chips and Avocado.
