Chicken Tamale Spoon Bread Recipe

Try this as a leftover dish with any leftover combo of chicken, pork, beef roast. Make either as a large caserole or individual for quick reheat

  • 1/4 grapeseed oil
  • 1 medium chopped onion
  • 1 -2 cups (1 1/4 lbs) leftover rotisserie chicken, or roast beef or taco meat
  • 1 clover garlic, minced
  • 1 tsp cayenne pepper
  • splash lea and perrins
  • i medium green or red or combo chopped bell pepper
  • 1 – 15 oz can tomatoes diced (2 1/2 cups)
  • 1 – 12 oz can whole kernel corn or 2 cups frozen
  • 1 Tsp salt
  • 1 1/2 TBSP chili powder (if using leftover taco meat do not add)
  • 1/4 tsp black pepper
  • 1/2 cup corn meal
  • 1 cup water
  • topping
  • 1/2 tsp salt
  • 1 1/2 cup milk
  • 1/2 cup corn meal
  • 2 TBSP butter
  • 2 eggs beaten lightly
  • 1 cup grated cheddar cheese

Directions

  1. Preheat oven to 375
  2. Heat the oil in medium saute pan. Add the onions, peppers and garlic and saute until onions are golden. Add the cooked chicken or cooked taco meat, or leftover roast beef or any combo. Stir in the tomatoes, corn salt cayenne and black pepper, lea and perrins cover and simmer.
  3. Whisk in the cornmeal bledned with the water and simmer for 10 min longer. Pour the mixture into a 9x13 baking dish or 4-5 individual baking dishes.
  4. For the topping
  5. combine the milk with the butter and salt in a saucepan and heat over medium low heat until it just begins to simmer. DO NOT BOIL. Gradually stir in the cornmeal and cook stirring until thickened but not stiff. Remove the pan from the heat and stir in the cheese and eggs. spread the topping over the chicken mixture in the baking dish. Bake uncover for 20 minutes until the cheese is golden brown
  6. Good place to use any combo of scrap cheeses to clean out fridge.
