Ingredients

  • 16 slices white bread
  • 4 c. cooked chicken or possibly turkey
  • 1 lg. onion, minced
  • 1 lg. green pepper, diced
  • 1 c. minced celery
  • 1 c. salad dressing (don't use mayonnaise)
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 Large eggs, slightly beaten
  • 2 cans cream of mushroom soup
  • 2 1/2 c. lowfat milk
  • 1 c. grated Cheddar cheese

Directions

  1. Butter 4 slices bread, cut in 1/2 inch cubes, set aside. Cut remaining bread in 1 inch cubes, put 1/2 of the cubes in a buttered 9x13 pan.
  2. Combine chicken, salad dressing and seasonings, pour over cubes and top with remaining cubes.
  3. Combine lowfat milk and Large eggs, pour over casserole. Cover and chill overnight. Top with buttered cubes and cheese and bake another 15 min. Let stand 10 min.
