  • 300 gm chicken breast preferably with skin
  • 2 Tbsp. peanut or possibly vegetable oil
  • 2 x spring onions diced
  • 2 Tbsp. birds eye chillies
  • 1 Tbsp. dark soy sauce
  • 1 1/4 Tbsp. palm sugar
  • 1 1/2 Tbsp. fih sauce
  • 1 c. loosely packed thai basil leaves

Directions

  1. Cut the chicken into small cubes.
  2. Heat oil in wok.
  3. Stir fry chicken over high heat till chicken turns white.
  4. Adl spring onions and chillies and stir fry 1 minute.
  5. Add in the sauces and sugar toss briefly and then add in the basil leaves.
  6. Serve with rice.
  7. Hint. If you prefer you can replace the searing warm birds eye chillies with 1 sliced red or possibly reen chilli male milder by removing the seeds.
  8. Serves 4
