This is a recipe that is filled with veggies and chicken, it really is not calorie laden and filling. You can serve over rice.
Ingredients
- 3 Boneless skinless chicken breasts
- 4 cloves garlic chopped
- 3 Tbs. grated fresh ginger
- 1/4 Cup Soy sauce
- 1 large sliced red onion
- 1 Head of broccoli
- 5 Mushrooms
- 2 Green zucchinis
- 8 Oz Bean sprouts
- 8 Oz Pea Pods
- Vegetable Oil
- 1 Can chicken broth
- 1 Tbs corn starch
Directions
- Blend chopped garlic, grated ginger and soy sauce in large bowl. Cut chicken in strips and marinate in bowl with sauce, allow to marinate for an hour.
- Slice all the vegetable into bite size pieces.
- Place 3 Tbs vegetable oil in wok or large skillet, when hot, add chicken and brown. Set aside cooked chicken, Add a bit more oil if needed add red onions begin sauteing, when softened a bit, add broccoli, continue cooking until slightly tender, add pea pods, zucchini , Add mushrooms and sprouts, and continue to saute, add a 1/2 can of broth and continue to cook. Add a bit of cornstarch to remainder of the broth and pour over veggies, add chicken back into skillet and simmer.
