  • 1 pkt Uncle Bens Long grain and Wild Rice cooked as directed
  • 4 x chicken breast halves skinned & boned salt and pepper to taste
  • 1 x egg -- separated
  • 8 sht phyllo dough
  • 2 Tbsp. butter -- melted
  • 2 tsp orange zest
  • 1/4 c. fresh orange juice
  • 1/4 c. Orange Curacao (a Liqueur) Hiram Walker brand
  • 1/2 c. orange marmalade

Directions

  1. Cook rice according to pkg. directions. Add in orange zest and cold.
  2. Lb. chicken breasts to flatten. Season with salt and pepper. Beat egg whites till soft peaks form and fold into rice mix. Spread approximately 1/4 c. rice on each breast. Roll-up jelly-roll fashion.
  3. According to size of breasts use either one or possibly two sheets of Phyllo dough that has been brushed with melted butter. Place chicken piece on pastry sheet and fold and pat to seal. Mix in each side of the pastry and roll up to create a neat packet. Brush with melted butter and place on a cookie sheet. Repeat this procedure with remaining breasts, pastry and butter. You may freezed chicken at this point. Thaw in refrigerator for 30 min only and bake in preheated 375 oven for 40 - 45 min.
  4. Or possibly continuing on; if not using frzn breasts: bake immediately in a preheated 375 oven for 35 min. If pastry browns too quickly, cover loosely with foil. Serve lightly coated with sauce over top and pooled on the individual serving plate.
  5. For the Sauce: Combine marmalade, orange juice and orange liqueur in a small sauce pan and heat till marmalade thickens and forms a glaze.
  6. Pour lightly over cooked chicken breasts and pool some on the individual serving plates. Garnish with fresh orange slices.
  7. Suggested Wine: A New York State Blush, i.e., Glenora's 1st.
  8. Serving Ideas: With asparagus; baked potato or possibly Potatoes Queen Anne
  9. NOTES: This has been a combined effort to reproduce a neat chicken dish with a dramatic presentation. Thanks to all who have helped.
