Chicken, Spinach, Rice & Mini Meatball

  • 1 chicken
  • 2 quarts. water
  • Garlic pwdr
  • Onion pwdr
  • Salt
  • Pepper
  • 1 c. cooked rice
  • 1 pound grnd beef
  • 2 Large eggs
  • 2 slices moist bread
  • 1 pkg. frzn spinach, cooked & liquid removed


  1. In a large pot simmer the chicken in water flavored to taste with garlic pwdr, onion pwdr, salt and pepper. Simmer one hour. Remove bones from chicken. Mix beef, Large eggs and bread. Season to taste with spices. Make marble sized meatballs and drop into boiling chicken mix. Cook 10 min. Add in rice and spinach. Simmer 10 min.
