  • 1 sm chicken about 1kg cut into pcs
  • 300 ml dry white wine
  • 1 x few peppercorns
  • 2 x red chillies
  • 2 x bay leaves
  • 2 x rosemary sprigs
  • 1 x celery stalk roughly minced
  • 4 x carrots
  • 3 x onions
  • 75 gm butter
  • 2 clv garlic crushed
  • 4 x thick slices white bread
  • 3 x level tbsp freshly grated parmesan
  • 75 gm dry pasta shapes
  • 1 x cos lettuce finely shredded
  • 2 x level tbsp minced freshly parsley
  • 1 x salt and freshly grnd black pepper

Directions

  1. Put the chicken pcs in a saucepan in that they fit snugly.
  2. Add in the wine peppercorns chillies bay leaves rosemary and celery.
  3. Roughly chop 3 carrots; quarter 2 onions.
  4. Add in to the pan with about 900ml cool water to almost cover the chicken.
  5. Bring to the boil then cover and transfer to the simmering oven for 2 hrs.
  6. Meanwhile mix together 50g softened butter and one garlic clove in a small bowl.
  7. Remove crusts from the bread spread with the garlic butter and spnnkle with parmesan.
  8. Cut into squares; place on a lightly greased baking sheet spacing them a little apart.
  9. Bake on the gnd shelf on the floor of the roasting oven for 5 to 7 min till just golden brown then cnspen in the simmering oven for 10 to 15 min.
  10. Leave the chicken to cold slightly then transfer the chicken to a plate and strain the stock.
  11. When cold sufficient to handle remove the chicken from the bones and tear into bite size pcs; set aside.
  12. Return the stock to the pan.
  13. Bring back to the boil add in the pasta and cook on the floor of the simmering oven for 5 min.
  14. Meanwhile cut remaining carrot into fine matchsticks; chop remaining onion.
  15. Heat 25g butter in a small pan.
  16. Add in the onion and the remaining garlic clove; cook on the simmering plate for 5 min till softened.
  17. Add in the carrot and cook for 2 min. Add in to the stock and pasta; cook for 5 min.
  18. Stir in the chicken lettuce and parsley. Heat gently stirring till lettuce has wilted.
  19. Season to taste.
  20. Serve the chicken soup accompanied by the warm garlic and parmesan croutons.
  21. A wonderfully warming spicy soup to make in advance and then reheat for a hearty lunch after a cool winter walk.
  22. Serves 6
