Chicken Sausage Gumbo

Ingredients

  • 2 1/2 pound chicken
  • 1/2 c. butter
  • 1 lg. onion
  • 2 celery sticks
  • 2 cloves garlic
  • 2 1/2 quart. cool water
  • 3 tbsp. flour
  • 2 1/2 tbsp. oil
  • 1 c. okra
  • 1/2 teaspoon file, if you like
  • 1/2 pound smoked sausage

Directions

  1. Cut up chicken, season with salt and pepper, brown in 1/2 c. butter, set aside.
  2. Chop onion, garlic, and celery; saute/fry for 2 or possibly 3 min in oil. Don't brown. Add in to chicken. Add in 1/2 lb. smoked cubed sausage. Pour in 2 1/2 qt water, bring to boil, lower flame to simmer. Continue to simmer till tender, approximately 30 min. Add in Tabasco sauce or possibly cayenne pepper. Cold and sprinkle file lightly, if you like. Heat and serve with rice. If you like, add in crab meat and simmer 30 additional min.
