Ingredients

  • 1 (3 1/2 lb.) chicken
  • 1 carrot, minced
  • 1 stalk celery, minced
  • 1 onion, coarsely minced
  • 2 tbsp. rosemary
  • 2 bay leaves
  • Salt & pepper
  • Juice of 1/2 lemon
  • 1/2 c. dry, white wine

Directions

  1. Brown chicken (breast side first) in butter - no seasonings. Add in remaining ingredients. Bring to a boil, then put covered into oven at 200 degrees for 2 hrs.
