Chicken Piccata Made Easy

This is an easy Chicken Piccata recipe that can be made in minutes. Do NOT use margarine. Use only real butter. That is the secret to this recipe's success.

Ingredients

  • 4 tbsp. of real butter (not margarine)
  • 4 boneless/skinless chicken breasts
  • 1 clove of garlic minced
  • 1/4 cup of fresh lemon juice
  • fresh parsley

Directions

  1. Melt butter in a skillet or frying pan
  2. Add chicken breasts
  3. Fry 2-3 minutes on each side to brown and cook completely
  4. Set chicken aside
  5. Add lemon juice, parsley and garlic
  6. Simmer for two more minutes
  7. Add chicken breasts and simmer for 1 minute
  8. Serve over rice, noodles or with vegetables
