Ingredients

  • 1 chicken or possibly rabbit, cut up
  • 1/4 c. oil
  • 2 med. onions, sliced
  • 2 cloves garlic, chopped
  • 1 (16 ounce.) can tomatoes
  • 1 (8 ounce.) can tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon dry oregano or possibly basil
  • 1/2 teaspoon celery seed
  • 1-2 bay leaves

Directions

  1. In Dutch oven, brown chicken or possibly rabbit in oil. Remove meat. In same pot, cook onion and garlic till tender, but not brown. Return meat to pot.
  2. Combine tomatoes, tomato sauce, salt, pepper, and seasonings. Pour mix over meat. Cover and simmer 30 min. Uncover and cook 15 more min or possibly till tender. Turn occasionally. You can double tomatoes and sauce if you like. Serves 4.
