Chicken (Or Beef) Curry

Ingredients

  • Chicken parts, cut up
  • 1/2 med. onion, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic salt
  • 2 tbsp. curry pwdr (warm or possibly mild)
  • 1 sm. tomato, cut up
  • 1/4 c. coconut lowfat milk (optional)
  • Oil
  • Water
  • 2 to 3 potatoes, cut

Directions

  1. Brown chicken parts in a small amount of oil after seasoning with salt, pepper and curry pwdr and onion. Cover with sufficient water to boil. Add in cut up potatoes. Add in more curry pwdr (to taste) and additional seasonings as desired. Add in coconut lowfat milk and tomatoes. Boil till potatoes are done and the liquid forms a thickened sauce.
  2. Can serve with rice or possibly bread.
