Ingredients
- 1 green pepper, cut into julienne strips
- 1 red pepper, cut into julienne strips
- 1/2 c. minced onion
- 1/4 c. veg. oil
- 2 (8 ounce.) chicken breasts, boned, skinned, cut into 1/2 inch strips
- 12 ounce. raw shrimp, cleaned
- 2 garlic cloves, chopped
- 1/2 teaspoon chili pwdr
- 1/4 teaspoon grnd cumin
- 1/4 teaspoon thyme
- 1/4 teaspoon allspice
- 1/8 teaspoon Tabasco sauce
- 1/2 c. brown sauce (see note)
- 1 tomato, cut into julienne strips
- 2 tbsp. chili sauce
- Saffron rice ring
- Okra, optional
Directions
- 1. Saute/fry red and green pepper and onion quickly in warm oil to maintain hard texture; remove from skillet with a slotted spoon and keep hot. Saute/fry chicken; remove from skillet. Saute/fry shrimp; remove from skillet.
- 2. Saute/fry garlic and spices; add in brown sauce, tomato and chili sauce. Add in sauteed vegetables and shrimp. Spoon into saffron rice ring. Garnish with sauteed okra.
