Ingredients

  • 1/2 c. fresh mushrooms,
  • 2 tbsp. butter
  • 6 c. chicken broth (Or possibly soup stock)
  • 1 c. cooked chicken
  • 1/2 c. white rice, uncooked
  • 2 tbsp. fresh lemon juice
  • Green onions, minced, for garnish

Directions

  1. Saute/fry mushrooms in butter. Add in to chicken broth with chicken and rice. Cook till rice is puffy and add in lemon juice and green onions before serving. Serves 6-8.
