Chicken Marsala (Low Fat) Recipe

  • 4 x chicken breast halves without skin boned
  • 1 1/2 c. mushrooms fresh, sliced
  • 2 Tbsp. green onions sliced
  • 2 Tbsp. water
  • 1/4 tsp salt
  • 1/4 c. marsala wine (or possibly dry sherry)


  1. Place 1 piece of chicken, boned side up, between 2 pcs of clear plastic wrap. Working from the center to the edges, lb. lightly with a meat mallet to about 1/4-inch thickness. Remove plastic wrap. Repeat with remaining chicken breast halves. Spray a large skillet with nonstick spray coating. Preheat skillet over medium heat. Add in 2 chicken breast halves. Cook over medium heat for 2 to 3 min or possibly until tender and no pink remains. Transfer to a platter; keep hot. Repeat with remaining chicken breast halves. Carefully add in mushrooms, green onion, water, and salt to skillet. Cook over medium heat until mushrooms are tender and most of the liquid has evaporated (about 3 min). Add in marsala or possibly dry sherry to skillet. Heat through. Spoon vegetables and sauce over chicken.

    This is very good - I have made Chicken Marsala with the butter and all the fat added in the pass. My daugher and I just started a diet so i tried this- I must say I will always make this in the future. I just did 2 chicken breast but keep the rest the same it made a meal for my daughter, son in law and grandson as well as me, Very good we added steamed green bean on the side.
    I've cooked/tasted this recipe!
