Ingredients

  • Chicken/marinade:
  • 1 lb. chicken cubed
  • 2 T peanut oil
  • 1 T sesame oil
  • 1/4 tsp. ginger
  • 1/2 tsp. white pepper
  • Sauce:
  • 1 c. chicken broth
  • 1/4 tsp. ginger
  • 1/2 tsp. white pepper
  • 1 T peanut oil
  • 2 T sesame oil
  • 1/2 tsp. rice vinegar
  • 1/2 tsp. sugar
  • 2 T corn starch
  • 2 T water
  • Vegetable:
  • 1 bag mixed veg
  • (Ex: broccoli, carrot, pea pod steamer bag from produce dept.)
  • 1 scallion minced
  • 1 clove garlic minced
  • 1 package lo mein noodles
  • (Ex: Wel-Pac Chow Mein Stir Fry Noodles)

Directions

  2. Cut chicken into bite sized pieces. Mix marinade ingredients, pour over chicken, stir to coat, and set aside.
  3. Combine chicken broth, ginger, pepper, oils, vinegar and sugar in a bowl. Combine corn starch and water in a separate bowl until smooth and then mix into sauce, set aside.
  4. Bring a small pot of water to a boil. Add about 1/2 tsp. salt to the water, cook noodles for three minutes. Drain, rinse and set aside.
  5. Heat one tablespoon of peanut oil in a wok until hot, add half of the chicken, stir fry until cooked through. Repeat with remaining chicken. Set aside.
  6. While wok is still hot, stir fry scallion and garlic until fragrant. Add vegetables, stir to combine, add about 1/4 cup of water, cover and let steam. When broccoli is bright green and carrot is tender/crisp, remove from wok.
  7. Stir sauce ingredients to combine well, and add to wok. When the sauce starts to thicken, add chicken, vegetables, and noodles. Stir to coat all ingredients evenly with sauce. Serve hot.
