Ingredients

  • 1 lrg Chicken breast, partially fr
  • 1 Tbsp. Dry sherry
  • 2 slc Ginger, sliced thin
  • 1 Tbsp. Soy sauce
  • 2 x Scalliions, cut in 1/4" piec

Directions

  1. Skin & bone chicken. Cut into 1x1x1/2" pcs.
  2. Marinate chicken pcs 20 min in sherry, soy sauce, ginger, scallions, salt & sugar. Slice each water chestnut in 4 pcs.
  3. Lightly oil each sq.of wax paper & place on it piece of chicken & slice of water chestnut. To wrap, fold up botton corner 2". Fold over the left corner 2 ", then right corner. Fold up the filled portion once again; finish by tucking remaining corner inside.
  4. Heat oil to 375. Fry pkgs. filled side down for 2-3" turn & fry few seconds. Drain.
