Ingredients

  • 1 (5 lb.) roasting chicken
  • 3/4 c. diced celery
  • 1 c. Mandarin orange sections, liquid removed
  • 1/2 c. cultured lowfat sour cream
  • 1 c. green grapes
  • 1/2 c. mayonnaise
  • 2 tbsp. finely chopped onion
  • 1 tbsp. lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Cashew nuts

Directions

  1. After chicken is cooked and cooled, remove skin. Cut chicken into fairly large bite size pcs. Place in a bowl and add in celery, grapes, orange sections. Mix together lowfat sour cream, mayonnaise, onion, lemon juice, salt and pepper.
  2. Pour over chicken and fruit and mix well. Cover and refrigerateseveral hrs to let flavors blend.
  3. I add in the nuts just before I serve it as I do not want them soggy. May substitute onion salt for chopped onion and do not always use pepper. Makes a great graduation salad.
